German chocolate cake is great low-fat. Really. I was skeptical when a friend first offered me a piece of her low-fat, reduced-sugar German chocolate cake about a year ago. It’s a good thing I tried it, though. The cake is chocolatey, moist and light. It doesn’t sit like a rock in your stomach for hours, as some German chocolate cakes do. And it uses a mix, so it’s quick. If you appreciate chocolate, you ought to try it — especially if you’re among the three-quarters of readers who probably don’t believe me right now...

Tom Udall, D-N.M., and nine readings by children of various works c...
New dairy regulations recently put on hold by Gov. Susana Martinez were bad for the industry, according to local dairy owner Alva Carter Jr. In the 2009, state lawmakers adopted a bill requiring strict regulations on groundwater pollution prevention for New Mexico dairies. After a lengthy process, the state Water Quality Control Commission passed the regulations. But before the regulations could take effect, Martinez issued an executive order sending the regulations to a Small Business Task Force, effectively putting... Full story

I recently discovered an Italian-style chicken dish that’s both a little different and a little familiar. Roosevelt County Extension Home Economist Connie Moyers provided the recipe in the book from her Christmas program this year. She gave me permission to reprint it. The dish is easy to make and tasty, with some ingredients being familiar and some a change of pace. I found all of the items in Portales, too. Chicken Artichoke Pasta 1 package (8 ounces) uncooked bow tie pasta 1 1/2 pounds boneless, skinless chicken breast, c... Full story

The “Snow on the Window Pane” art exhibit portrays somber undertones with characters trying to be positive in bad situations, said the man who created the works. Andrew Jonathan Merritt of Clovis, who says he’s not an artist but is aspiring to live up to the title, has about a dozen pieces on display now through Feb. 22 at the Golden Library Runnels Gallery. They are recent works that haven’t been exhibited before, he said. “In those particular ones, I think each one is a little bit different, but a common thread is overco...
My sister-in-law, Ashley, and I seem to be developing a fettuccine tradition. Over the holidays the last two years, we’ve made chicken-vegetable fettuccine Alfredo together. It wasn’t planned either year. With Ashley and Eric being married less than a year and us living far apart and being busy, I’m still getting to know my sister-in-law. But, I’ve learned Ashley’s a good cook, and we seem to work well together. Ashley is actually a better cook than me. My usual style is, “Make it as good as possible while getting it...

Floyd farmer Allen Deen said Roosevelt County had 75 percent more cotton than normal this year, and Kenny Whitecotton of Strippers Custom Harvesting estimated the county had 5,000 to 6,000 acres of the crop. Predictions of and contracts with favorable cotton prices led farmers to plant more of the crop this year. “It was one of the best yields we’ve had in our area, and price,” Deen said. The price was the highe...

After a few months of good milk prices, dairy farmers say they are again seeing their profit margins drop, but forecasts indicate rising milk prices later in 2011. In 2009, milk prices were low and feed costs high, meaning dairies lost money. Roosevelt County dairy owner Alan Anderson said dairies came back a little this year, due to better milk prices, but high feed costs are bringing down profit margins. “Milk prices are going down as we speak,” Anderson also said. He received $16.48 per 100 pounds of milk from Nov...
