A Portales man has been honored for his contributions during more than 30 years of handbell ringing and handbell choir directing. Bill Wood has received the 2010 Ring of Fame award from Area 11 of the American Guild of English Handbell Ringers. The Portales Senior Center is hosting a carnival designed for all ages. “It’s something the whole family can come and enjoy,” said Miriam Welker, president of the Portales Senior Citizens organization. Amish Friendship Bread is good stuff. I’ve encountered the sweet bread more than once. Most recently, Iris Johnson of Portales gave me a starter. Iris said she doesn’t think you can make an inedible mistake with the bread. Amish Friendship Bread works this way: Somebody gives you a starter, light brown goo in a sealed plastic bag. Prowling through recipes on a website the other day, I discovered a great idea: mangos and balsamic vinaigrette in a salad. I put the two with some other ingredients and had a tasty light meal or side salad. It’s healthy, simple and a change of pace. The sweet mango and the tangy basalmic vinegar play off each other well, and the raw spinach and cheese are good additions. I used colby cheese, but I suspect muenster would also work well....
