Lonnie was trying out ways to use pumpkin and was pleased with the results of the pancake experiment. He says you can substitute anything for the pumpkin and suggested banana or blueberries. Pumpkin pancakes 2 cups pancake mix (preferably whole wheat) 1 1/2 cup water 2/3 cup pumpkin Mix well. Pour about 1/3 cup batter into a skillet on medium heat or a hot griddle. Cook until the t...

Each of the 30 students in Laura Adkins’ “Clothing and Costume Design” class is making a dress for the Little Dresses for Africa program. “I hope that they get out (of the project) that they can use their new-learned skill for others and learning to sew can be a gift,” Adkins said. “Because it takes so much time, it can be a bigger gift than if you just go and buy something. They put their h...

At the Portales City Council meeting Tuesday, councilors voted to provide $5,000 to match a $10,000 New Mexico Mortgage Finance Authority grant to hire a consultant to do a study and create the plan. A Colorado developer, New Communities LLC, would like to build a 50-unit apartment complex in Portales, said City Manager Tom Howell. The location is undecided. If...
Eating out of cans and boxes isn’t gourmet dining, but sometimes time demands precedence. Processed food isn’t high on the nutritionist’s list of best things to eat, but my inexpert opinion is that with a little label-reading, it’s not a bad occasional option. I keep cans of soup on hand for unexpected time deficits, since they’re fast, not too expensive and don’t require refrigeration. Most soup companies have lines with reduced fat, sodium or calories. Some unhealthified soups have a reasonable amount of calories an...
