  • Food at the speed of life: Recipe refines red enchiladas

Dad prefers green chile over red. However, Mom has long made red enchiladas with her mother’s recipe. Dad made a few changes to the recipe to suit his tastes. Also, my family uses vegetable oil instead of meat grease in the sauce, which is just a little healthier. For a somewhat different red enchilada, try this:...

  • Military mama: Being mother well worth sleep lost

I’ve reached the peak of my twenties, in that I’m in my final year of being able to claim the decade. Though, in all likelihood, I will be celebrating my twenty-ninth birthday over and over again. Age is just a number, but I may just choose to hang out at this specific one for a while. I just have to figure out how I can stop aging yet my kids keep growing. It’s hard to ignore the fact that my oldest is in school full-time these days. I own a kindergartner. I have such great plans for the time that Kaleb is away at schoo... Full story

  • Frumpy Middle-Aged Mom: You know there are teenagers in the house when…

    Marla Jo Fisher

I have a friend whose children are old enough now to strike fear into the hearts of their mother, as she dreads the coming transformation from adorable kid to hulking, hairy creature from the black lagoon. Since my kids are already well into this transition, Barb views our family like a big, messy science experiment, peering at us as if we were all in a petrie dish, to see what she can learn to prevent future similar disasters in her house. I have explained to her that these years are exactly like high school football Hell...

PORTALES — In 20 seasons at Eastern New Mexico University’s volleyball coach, Mike Maguire built a program that ran off 16 consecutive winning seasons, including two Lone Star Conference regular-season championships and capped by a 25-9 mark and a trip to the NCAA Division II regional finals in 2004. After several years of doubling as the school’s athletic director, he gave up his coaching role following the 2006 season. Three years later, no longer the AD, he returned to the sideline last season and helped the str...

  • ENMU students vie for KENW staff posts

    Kevin Wilson

As students awaited their auditions for News 3 New Mexico Wednesday, the air-conditioned conference room at the KENW broadcast center offered a brief respite from the 100-degree temperatures outside. Down the hallway, however, students would feel the heat of television lights, welcoming them into months of hands-on experience and an audience of people who may never set foot in Portales, let alone on the campus of Eastern New Mexico University. Wednesday was the second day of a three-day closed audition process at the... Full story

  • Water, fuel, whiskey important to farmers

Remember that song, “toe bone connected to the foot bone, connected to the ankle bone….?” Agriculturists for sure know the “words to that song.” Water is the first bone. Gotta have it. Large sections of our country, where water from the sky seldom falls, depend on irrigation water — either from rivers and lakes (snowmelt) or wells. The water (from whatever source) helps the food and fiber crops grow, the ones of most interest to livestock growers being corn and alfalfa hay. Much of corn production has been co... Full story
