Triple batch beef
For those who love long-cooking soups and stews but don't have enough time to prepare them every time the urge hits, having containers of Triple Batch Beef in the freezer will be a boon. Pieces of pot roast are simmered with onion and garlic to make the base for various soups. Total preparation and cooking time: 2-1/2 hours.
Trim fat from beef. Cut into 3/4 pieces. In Dutch oven, heat oil over medium heat until hot. Add beef pieces (1/4 at a time) and brown evenly, stirring occasionally. Season with salt and pepper. In same pan, add onions and garlic; cook and stir until onions are lightly browned. Pour off drippings. Return beef to pan; add water. Bring to a boil; reduce heat to low. Cover tightly and simmer 1 1/2 to 2 hours or until beef is tender. Skim off fat. Place about 2 cups beef mixture into each of three 1-quart freezer containers. Cover containers tightly and freeze. Makes 6 cups cooked beef. Use beef mixture in various soups and stew recipes.
"Creative Living" is produced and hosted by Sheryl Borden. The show is carried by more than 118 PBS stations in the United States, Canada, Guam and Puerto Rico and is distributed by Westlink, Albuquerque.
