Information on healthy citrus recipes, fun with felting, and making chili rellenos will be the featured topics on "Creative Living" 9:30 p.m. on Tuesday and noon on Thursday. (All times are Mountain.)
Eleisha Ensign, Executive Director of TexaSweet Citrus Marketing, Inc. in Mission, Texas, will demonstrate making a light, healthy flavorful dish using unique ingredients, including Quinoa, an amino acid-rich protein seed.
Megan Thome is the spokesperson for EK Success Brands, and she's going to show a variety of felted projects, from a sweater, to a pillow to seasonal décor, and she'll demystify the craft of felting, which is so easy! She's from Kansas City, Mo.
Chef and cooking school owner, John Vollertsen (known as Chef Johnny Vee) will show how to roast and peel green chilies and then transform them into delicious batter wrapped Chili Rellenos, stuffed with Cheddar Cheese. He owns the Los Cosas Cooking School in Santa Fe.
Information on using pre-packaged convenience products for cooking and creating landscape scenes with fabric and thread will be the featured topics on "Creative Living" noon on Tuesday and 2 p.m. on Saturday. (All times are Mountain.)
Roxanne Wyss is a home economist with Williams Foods, Inc. in Lenexa, Kan., and she will demonstrate some great ways to spice up any recipe — using pre-packaged convenience products.
Patsy Shields, Director of Education with Sulky of America, will show how different fabrics and threads can create unique landscape scenes for wall hangings or to use on wearable art. Shields lives in Sellersburg, Ind.
Chile Rellenos
Cut cheese into matchstick-size pieces — 2 inches long by 1/8" square. Cut a tiny slit toward the top of the chile and carefully slide in pieces of the cheese until chile is filled with cheese. Drain stuffed chiles on paper towel before dipping in batter. Heat oil to 350° F and dip chilies into batter and carefully slide them into the heated oil. Turn chiles over once they are golden brown. Second side will brown quicker. Reserve leftover batter for another use. Drain on paper towels and serve warm with Red Chile Sauce. Serves 6.
