Grandma's holiday stuffing

  • 2 pkgs. pork sausage
  • 1 1/2 cups onion, chopped
  • 1 1/2 cups celery, chopped
  • 1/4 cup parsley, chopped
  • 2 medium apples, chopped
  • 2 tsp. poultry seasoning
  • 2 cups chicken broth
  • 1 egg, lightly beaten
  • 1 pkg. cornbread stuffing
  • 1/2 cup chopped pecans

Preheat oven to 325 degrees F. In a large skillet, cook sausage over medium heat, stirring frequently until cooked and no longer pink. Add onion, celery, apple, and parsley. Cook until onion is translucent, stirring often. Transfer mixture to a large bowl, add remaining ingredients and stir well. Pour into a well-greased 3 to 4 quart casserole dish. If mixture seems too dry, pour more chicken broth on top. Cover and bake for 45 minutes. (Can be placed into a crock pot. Place on low for 4 to 5 hours. If using the crock pot, be sure to add extra broth.)

"Creative Living" is produced and hosted by Sheryl Borden. The show is carried by more than 118 PBS stations in the United States, Canada, Guam and Puerto Rico and is distributed by Westlink, Albuquerque.
