Summer chicken
• 2 boneless, skinless chicken breasts
• 1 1/2 cups blueberries
• Salt & pepper, to taste
• Tbsp. unsalted butter (optional)
Sauté chicken breasts as desired. Grill or sauté in pan til done. In a saucepan, reduce blueberry juice on medium heat. Stir occasionally until reduction starts to thicken, stirring more frequently at this point.
A small dab of butter can be added to create a more velvety texture.
Drizzle blueberry reduction over chicken. Add a few blueberries on top of chicken and serve with a bright green lettuce salad or roasted veggies for a beautiful garnish.
“Creative Living” is produced and hosted by Sheryl Borden. The show is carried by more than 118 PBS stations in the United States, Canada, Guam and Puerto Rico and is distributed by Westlink, Albuquerque.
