Information on how a nutritious diet can lead to better eyesight and preparing batter wrapped chili rellenos will be the featured topics on “Creative Living” on Tuesday at 9:30 p.m. and on Thursday at noon.

Dr. Edward Kondrot is the world’s leading ophthalmologist and a board-certified homeopathic physician, and he says that a nutritious diet can lead to better eyesight. He’ll discuss the five essential foods to incorporate into your diet. He is an author and founder of Healing the Eye & Wellness Center in Dade City, Florida.

Chef and cooking school owner John Vollertsen, known as Chef Johnny Vee, will show how to roast and peel green chilies and then transform them into delicious batter wrapped Chili Rellenos, stuffed with cheddar cheese. He’s from Santa Fe.

Information on keeping cut flowers fresh and ways to enjoy turkey and stuffing year ‘round will be the featured topics on “Creative Living” on Tuesday at noon and on Saturday at 2 p.m.

Jill Slater of the California Cut Flower Commission will show how to keep cut flowers fresh. Her tips come straight from the professional florists, and will help retain the beauty of fresh flowers for a longer period of time. Slater is from Watsonville, California.

Chef and cookbook author Marcie Rothman will show some traditional holiday recipes, including turkey and stuffing, that can be enjoyed year ‘round. Her suggestions are especially pertinent for “first time cooks.” Her company is Western Research Kitchens in San Diego, California.

Beer batter for chile rellenos

• 3/4 cup plus 2 tablespoons flour

• 1/4 cup cornstarch

• 1/2 teaspoon salt

• 1/4 teaspoon cumin

• 1/4 teaspoon cayenne

• 1 cup beer, any brand except dark beer

Combine flour, cornstarch, salt, cumin and cayenne in medium bowl. Measure beer into tilted measuring cup and insure that you have 1 cup liquid. Stir in beer and foam and whisk batter until smooth. Allow batter to rest for 20 minutes before using. If a thinner batter is desired, add a small amount of additional beer.

Chef Chat — Students are always asking if it’s possible to bake a batter coated relleno. This batter does bake well by spraying a cookie sheet generously with cooking spray and then laying the dipped relleno onto it. Spray the relleno lightly with the spray and bake at 400 degrees until it is nicely browned, about 12 minutes. This is the only batter that works in this manner.
