Information on quilting, fitness and cooking with legumes will be the featured topics on “Creative Living” at 9:30 p.m. on Tuesday and at noon on Thursday.

Quilter Karen Eckmeier is going to show a new series of patterns which use a paper backed fusible for easy appliqué, and also show how she combines floral, fauna and critters to create a kaleidoscope design. Eckmeier lives in Kent, Connecticut.

Author and fitness guru, Kate McKay, is going to talk about the components of a “living sexy fit” lifestyle, which takes a holistic approach. She includes correct eating, exercise and motivation. Her book is titled “Living Sexy Fit…at Any Age.” McKay is from Newburyport, Massachusetts.

John Vollertsen, better known as Chef Johnny Vee, will demonstrate how to cook with healthy legumes and discuss why they are so good to add to your diet. Vollersten owns and operates his own cooking school, and he will prepare a Cannellini bean dip and Tex Mex veggie chili. He’s from Santa Fe.

Information on making crocheted laces and edgings by machine, using botanicals in handmade paper and shopping for furniture will be the featured topics on “Creative Living” at noon on Tuesday and at 2:00 p.m. on Saturday.

Sewing instructor, Cindy Losekamp, will show how to use machine embroidery techniques to create crocheted laces and edgings, which resemble old-fashioned handmade designs. Losekamp is from Cedar Grove, Indiana.

Professional papermaker, Arnold Grummer, will show samples of handmade paper that have been made with various botanicals, which is a great way to recycle paper. He’ll also explain which items should not be put in the paper pulp. He lives in Milwaukee, Wisconsin.

Lacy Roberts, Visual Coordinator for Haverty’s Furniture in Lubbock, Texas, will explain what to look for in shopping for quality furniture pieces, including construction, hardware and fabric.

Tex-mex Veggies Chili

• 3 tablespoons olive oil

• 1 medium white onion, finely chopped

• 3 garlic cloves, minced

• 1/4 cup finely chopped green bell pepper

• 1 jalapeno, seeded and finely chopped

• 1 1/2 teaspoons toasted ground cumin

• 2 tablespoons pure ground hot red chile

• 1 teaspoon Mexican oregano

• 1/2 teaspoon ground sage

• 1 cup lentils, washed and picked over

• 1 cup canned kidney beans, drained

• 3 plum tomatoes, chopped

• 1 1/2 teaspoons kosher or sea salt

Chili fixin’s:

• 1/4 cup sour cream

• 1/4 cup chopped cilantro leaves

• 1/4 cup sliced scallions

• 1 tablespoon minced jalapeno

Place the olive oil in a deep, heavy bottom soup pot over medium heat. When hot, add onion, garlic, bell pepper, and jalapeno. Stir and fry for 3 minutes. Turn the heat to medium-low and cook until the onions become translucent. Add cumin, ground chile, oregano and sage. Stir briskly and add the lentils, 4 cups of water, kidney beans, tomatoes and salt. Bring to a boil. Cover and turn heat to low, and cook gently for 60 minutes. Serve in warm bowls each topped with 1 tablespoon sour cream, 1 tablespoon sliced scallions, pinch of jalapenos and cilantro. Serves 4.
