CLOVIS — Clovis restaurant Taqueria Jalisco was downgraded Tuesday from "approved" to "unsatisfactory," according to a press release sent by the New Mexico Environment Department.
The department made the announcement Tuesday after an investigation determining the following:
• Unsafe sources
• Improper holding temperatures
• Poor personal hygiene
• Improper storage of food, utensils, chemicals
• Inadequate cooking/cooling
Manager Anjel Santoyo part of the downgrade was due to not having an additional sink in the kitchen.
"It was just about a sink," Santoyo said. "We only had one but they said we needed another one.
"We're getting a new sink ready right now," he added.
Santoyo also said the fridge thermostats were another reason for the downgrade.
While the fridge is still working properly, he said, the thermostats were giving improper temperatures.
Santoyo said the improvements will be made "as fast as possible."
The grade will remain in place until restaurant staff notifies the state it has made the necessary corrections, and those changes are recognized in a followup inspection.
