Information on Cajun cooking and painting with pastels will be the featured topics on “Creative Living” on Tuesday at 9:30 p.m. and on Thursday at noon. (All times are Mountain.)

John Vollertsen (also known as Chef Johnny Vee) will demonstrate several recipes featuring Cajun cooking. Crazy for Cajun is one of the popular classes he teaches in Santa Fe, and the recipes are all New Orleans specialties.

Professional artist Brenda Pinnick is going to explain the difference between painting with pastels and painting with chalk. She’ll talk about the types of surfaces to use for pastels and show several examples of adding finishing marks on a painting. Pinnick lives in Woodstock, Georgia.

Information on painting electrical outlets, making “green” jewelry and flower arranging will be the featured topics on “Creative Living” on Tuesday at noon and on Saturday at 2 p.m.

Jamie Alcorta in Lubbock will show how to clean up the clutter of electric outlets under the backsplash by painting them to match a popular tile — tumbled marble.

Designer Shannon Bielke will show how to use recycled products and lots of “bling,” along with paints to create beautiful “green” jewelry. She’s from Payson, Arizona.

Casey Schwartz is a floral designer, and she makes arranging flowers look so easy. She’s going to demonstrate a technique called gather, drop and fill for arranging flowers. It uses a main face flower, a spray flower and some filler. She’s in Redondo Beach, California.

Blackened Red Snapper

Seasoning Mix:

• 2 Tbsp. paprika

• 1 tsp. onion powder

• 1 tsp. garlic powder

• 1 tsp. cayenne pepper

• 1 tsp. smoked paprika

• 1 tsp. white pepper

• 1 tsp. black pepper

• 1 tsp. dried thyme

• 1 tsp. dried oregano

• 1 tsp. Kosher salt

Thoroughly combine all spices in a small bowl. Store in a jar in a cool, dry space. Pat 6 snapper filets dry with paper towels. Sprinkle liberally with seasoning mix. Heat up a cast iron skillet until white hot. Place snapper filets in pan and sear on each side approximately 2 minutes. Cook until fish is opaque. Plate snapper and drizzle 1/4 cup melted butter over it. Serve with sliced lemons.
