Dealing with discouragement, tacos ahead on show

Information on dealing with discouragement, preparing raw taco meat and making artist trading cards will be the featured topics on “Creative Living” 9:30 p.m. Tuesday and noon Thursday.

Sharon Barnes is a therapist for Sensitive and Gifted children and adults, and she will explain “The Hero’s Journey for Highly Creative People” who may suffer from discouragement. She will tell about the four stages and talk about coping tools and skills that may be helpful. Barnes lives in Littleton, Colorado.

Heart disease and diabetes can be changed through diet, and Chef Rhonda Beyreis will demonstrate how to prepare raw taco meat that can be used in a variety of recipes to help with health issues. Beyreis is from Phoenix.

Marjolaine Walker is the owner and designer for Twelve Stones Scrapbooking. She will show a few sets of her own artist trading cards as well as demonstrate how to make them. Artist Trading Cards are miniature pieces of art that are traded with other artists.

Information on making porcelain dolls and conquering chaos in the closet will be the featured topics on “Creative Living” noon Tuesday and 2 p.m. Saturday.

Dianna Effner is an artist and designer, and her company is Expressions, Inc. She’s going to talk about porcelain as a medium for making dolls and explain “the magic moment” which occurs when the

doll is removed from the mold. She’s from Jamestown, Missouri.

Nancy Nix-Rice is a wardrobe consultant and author, and she’s going to show how to conquer chaos in the closet as well as share some organizing ideas for accessories and purses. Her book is titled “Looking Good” and she lives in St. Louis.

Raw Taco Meat

1 1/2 C. raw walnuts, soaked and dehydrated

1 tsp. Taco Seasoning

2 tsp. Tamari

3/4 tsp. Ground Coriander

1 1/2 tsp. Ground Cumin

1/8 tsp. Cayenne Pepper

Soak raw walnuts for 8 hours to remove all the enzyme inhibitors from the walnuts. Dehydrate the nuts at 115 degrees to ensure the live enzymes stay intact. If you are in a hurry you can towel dry your nuts the best you can and use immediately for this recipe. If they are too wet this recipe will end up a gooey mess. Place your walnuts in a Food Processor and grind to a medium crumble the texture of ground beef. Add the rest of the ingredients and pulse in. Serve on a Romaine Lettuce Leaf for Raw Tacos with your favorite toppings: Guacamole, Tomatoes, Onions, Olives and Raw Cheddar Cheese. Season this to your own taste level.

Do not over do the process as the oils in the walnuts will take over and your crumble will be too fine and the texture will be off.

Taco Seasoning

4 Tbsp. chili powder

2 Tbsp. cumin

4 tsp. coriander

2 tsp. paprika

2 tsp. sea salt

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. oregano (Mexican)

1/4 tsp. cayenne

Mix in bowl and store in airtight glass container.
