Opinion: Ozonated water trays, bread sculpting ahead on show

Information on using ozonated water trays and bread sculpting for Spring occasions will be the featured topics on “Creative Living” 9:30 p.m. Tuesday and noon Thursday (all times Mountain).

Dr. J. Tim Rainey will talk about the ozonated water trays and explain why ozone water is safer for patients. He’ll explain the benefits of using these trays and tell who would be good candidates for this treatment. Dr. Rainey is with the Texas Institute for Advanced Dental Studies and lives in Refugio, Texas.

Cindy Falk is the nutrition educator and co-director for the National Festival of Breads. When we think of Spring, flowers are blooming, Easter is coming, along with Mother’s Day and Graduations which give lots of occasions to celebrate. Falk is going to demonstrate making some bread sculptures that just take a few kitchen tools and lots of imagination. There’s no limit to the baker’s art in shaping bread. She’s from Manhattan, Kansas.

Information on a CDC-led National Diabetes Prevention program, turkey recipes for each season and using clear polymer stamps will be the featured topics on “Creative Living” noon Tuesday and 2 p.m. Saturday.

Extension Home Economist Shannon Wooton will discuss the CDC-led National Diabetes Prevention Program which is designed to bring to communities evidence based lifestyle change programs for preventing type 2 diabetes. She’s with the New Mexico Cooperative Extension Service in Roswell.

Janice Stahl is a turkey talk-line expert with Butterball, and she’s going to demonstrate recipe ideas for each season of the year, and talk about ways to save money by going to their website for click and clip coupons for promotions and cost-savings. She’s from Chicago.

Clear polymer stamps are fun to use, easy to clean and oh-so-versatile once you know a few basic techniques. Carlie Robertson is with Close To My Heart, and she will share some great stamping tips, including borders, texture stamping and more. She’s from Pleasant Grove, Utah.

Pumpkin black bean turkey chili

2 tablespoons vegetable oil

1 cup chopped onion

1 cup chopped yellow bell pepper

1 finely chopped jalapeno pepper

3 cloves garlic, minced

1 1/2 teaspoons chili powder

1 1/2 teaspoons ground cumin

1 1/3 teaspoons dried oregano leaves

3 cups beef broth

2 cans (15 oz. each) black beans, rinsed, drained

2 1/2 cups chopped leftover cooked Butterball® Turkey

1 can (15 ounces) Libby’s® Pumpkin

1 can (14.5 ounces) diced tomatoes

1/2 cup dry sherry

1/4 teaspoon salt

1/8 teaspoon ground black pepper

Heat oil in large saucepan on medium heat. Add onion, bell peppers, jalapeno pepper and garlic. Cook and stir 8 minutes, or until onion is tender. Stir in chili powder, cumin and oregano. Cook and stir 1 minute. Add broth, beans, turkey, pumpkin, tomatoes with their liquid, sherry, salt and black pepper; mix well. Bring to a boil, stirring occasionally. Reduce heat to low; simmer, uncovered, 45 minutes, stirring occasionally.
